Whole wheat pearl couscous are delightfully nutty, chewy balls of toasted semolina flour. This versatile alternative to pasta or rice is excellent in salads or topped with your favorite pasta sauce.

Basic Cooking Instructions
If desired, toast couscous in 1 tablespoon butter or oil for 3-5 minutes over medium heat before cooking. Bring 1 1/2 cups water to a boil. Add 1 cup pearl couscous and 1/2 teaspoon salt. Return to a boil, then reduce heat to a simmer, cover and cook until tender, about 15 minutes. Drain off any remaining water. Makes 3 servings.
